In a bowl add the egg whites and salt powder and mix for a few minutes, until the egg whites become foam, gradually add a tablespoon of sugar and mix. We will do this until we finish all the sugar.
Add the yolks and mix, then add the oil and mix, then add the vanilla essence and mix.
In a separate bowl, mix the flour with the baking powder and gradually add a tablespoon to the composition, until you incorporate the whole mixture of flour and baking powder.
In a 26 cm tray, lined with baking paper (I used a silicone tray and it was no longer necessary to use a baking sheet) we will add the resulting composition, and on top we will put the flat plum quarters that -I rolled in a little sugar.
Put the tray in the preheated oven, on low heat, for about 20-25 minutes. (Depending on the oven of each cake will be more or less, but be careful not to set the fire too high, because you risk that the plums will reach the bottom of the tray and the cake will burn.)
Remove the cake from the oven and leave to cool until it reaches room temperature.
I powdered it with a little powdered sugar and portioned it for serving.
