- Flour 500 gr

- Turmeric for yellow color crumb buns ½ tsp

Crush the yeast, add 1 tbsp. sugar, 3 tablespoons flour, add 250 ml of warm water and mix well. Leave to approach in a warm place for 30 minutes.
Add turmeric to a suitable dough for a pleasant yellow color of buns, 1 egg at room temperature (it is better to get it out of the refrigerator in advance), 1 tsp. tablespoon of salt, 2 tbsp. sugar, 40 grams of soft butter. Mix all the ingredients. Sift the flour gradually.
Knead the dough, it should turn out very soft, not stick to your hands. In no case do not add too much flour, otherwise you can hammer it, it will be dense and solid.
Cover the dough with a film or a towel, and let it come up and increase at least 1.5-2 times in volume.
Grease the working surface with vegetable oil, shift the dough, knead it a little, divide into 8 parts. From this amount of dough, 8 buns weighing 118 grams each are obtained. From each part you need to form a bun, wrapping the edges inward, forming a smooth top of the bun (see video).
Put the buns on a baking sheet lined with parchment and leave them to proof for 30-40 minutes. I usually put in the oven preheated to 50 degrees, and then turned off.
Grease buns with 1 yolk with 1 tbsp. milk. Sprinkle with sesame seeds on top. Bake for 20-25 minutes at a temperature of 160-180 degrees. Sprinkle ready-made hot buns with water and cover with a towel until cool. If you still have buns and they will not be scattered in an instant, then store them in a plastic bag so that they remain soft longer. Please see the whole process in the video.
