In a bowl, put 50 g of butter and melt it, add the rice and let it brown a little for 1-2 minutes without changing its color, then add the warm milk and let it simmer for about 30 minutes. . At first we chew in the composition because it will tend to rise and flow out. When it is ready to boil, add the vanilla sugar and pull it aside, leaving it with the lid on to cool and swell, because it will absorb more liquid.

- We prepare the apples: we peel them, we wash them before and after, then we put them on the large grater. Mix them with 2 tablespoons of sugar and 2 teaspoons of cinnamon and let them sit to let their juice.

- Beat the 2 eggs and a pinch of salt with a fork, until they become frothy and increase in volume. Add 1-2 tablespoons of agave syrup (I put only one, but if you like sweeter, you can put two) and continue beating until we think it is frothy enough.
