Ingredients for making omelet with pumpkin
- Pumpkin 1/4 pieces
- Onion 1 piece
- 5-6 eggs
- Salt to taste
- Pepper to taste
- Parsley 1 bunch
- Butter 1-2 tablespoons

Frying pan, kitchen knife, cutting board, spatula, plate, whisk.
Step 1: chop the vegetables.
Peel a quarter of the pumpkin from the peel and seeds. Peel the onion.
If desired, you can chop the vegetables coarsely or finely. I cut large, so the slices of vegetables in the omelet are more noticeable, and the onion remains crispy.
Step 2: fry the pumpkin with onions.
Heat oil in a frying pan, send vegetables into it, salt, pepper and simmer over medium heat for 10-15 minutes. Do not forget to stir occasionally so that nothing burns.
Step 3: beat the eggs.
Beat eggs while frying vegetables. Add to them the same salt and pepper a little. Beat everything with a fork or whisk until smooth.
Step 4: add the eggs to the vegetables.Continuing to beat the eggs, pour them into the pan to the fried vegetables. Sprinkle parsley on top, cover and cook until eggs are set. I love when the omelet is not baked to the end, so I always leave the top slightly raw, you can cook longer.
Step 5: serve the omelet with pumpkin.
Gently place the omelet on a plate, cut it into two and serve hot to the table. It turns out very tasty.
