Ingredients for making omelet with pumpkin

  1. Pumpkin 1/4 pieces
  2. Onion 1 piece
  3. 5-6 eggs
  4. Salt to taste
  5. Pepper to taste
  6. Parsley 1 bunch
  7. Butter 1-2 tablespoons

Step 1: chop the vegetables.

Peel a quarter of the pumpkin from the peel and seeds. Peel the onion.

If desired, you can chop the vegetables coarsely or finely. I cut large, so the slices of vegetables in the omelet are more noticeable, and the onion remains crispy.

Step 2: fry the pumpkin with onions.

Heat oil in a frying pan, send vegetables into it, salt, pepper and simmer over medium heat for 10-15 minutes. Do not forget to stir occasionally so that nothing burns.

Step 3: beat the eggs.

Beat eggs while frying vegetables. Add to them the same salt and pepper a little. Beat everything with a fork or whisk until smooth.

Step 4: add the eggs to the vegetables.

Continuing to beat the eggs, pour them into the pan to the fried vegetables. Sprinkle parsley on top, cover and cook until eggs are set. I love when the omelet is not baked to the end, so I always leave the top slightly raw, you can cook longer.

Step 5: serve the omelet with pumpkin.

Gently place the omelet on a plate, cut it into two and serve hot to the table. It turns out very tasty.

- Pumpkin omelet can be decorated with feta cheese or mozzarella. Add cheese immediately after pouring beaten eggs into the pan.
