The recipe for this ranch dressing or dip is an American one, quite recent. According to the New York Times (where I got my inspiration from) this ranch sauce appeared around 1950 at Hidden Valley Ranch in Santa Barbara (California). Ranch means even farm and the sauce was prepared from the following ingredients: whipped milk (buttermilk), dried herbs, mustard, mayonnaise.

The classic ranch sauce recipe provides for the use of garlic and onion powder (dehydrated) as well as dried parsley, dill and chives. The mayonnaise / whipped milk ratios were initially equal but, over time, the mayonnaise was reduced to 1/3 and the remaining 2/3 was represented by whipped milk and fatter yogurt. The consistency can be adjusted with whipped milk (which is more fluid than yogurt) and so we can make a thinner dressing for salads or a thicker and creamier sauce for steaks or dips for fresh vegetables or nachos, crackers.

Eu am preparat acest sos ranch în varianta cu 1/3 maioneză de casă, 1/3 lapte bătut și 1/3 iaurt grecesc (10% grăsime) sau smântână mai slabă. Laptele bătut (buttermilk sau Buttermilch) este un subprodus care se obține la separarea untului (see here) și care se găsește în toate magazinele alimentare din țară.

Am pus usturoi, ceapă verde și verdețuri proaspete deoarece le aveam la îndemână dar și un pic de pudră de usturoi și ceapă pentru că au o aromă specifică. Veți vedea cât de repede și de ușor se prepară acest sos cremos, aromat și răcoritor!

Maioneza de casă se face foarte ușor dacă urmați această rețetă (faceți doar 1/2 din ea).

Intr-un bol din metal, amesteca galbenusul crud, usturoiul maruntit, 1/4 lingurita de sare si 2 lingurite de apa.

Amesteca incontinuu si toarna, din cand in cand, cate o lingurita de ulei de seminte de struguri, pana ce sosul se ingroasa si devine cremos. Apoi, adauga incet si uleiul de masline.
