Mix in a bowl the crushed yeast with sugar and warm milk (NOT hot!).
Add the yolks to the yeast bowl and mix well. Melt the butter and then let it cool and add it to the bowl.
Mix the ingredients well with a fork.
Separately mix the flour with the salt and add it to the bowl and knead until you get a smooth and elastic dough. Cover and leave to rise in a warm place.
When the dough has leavened, we put it on the table and knead it a little more to get the air out of it. Divide the dough into 50 pieces. We round them between the palms and place them on the squares of baking paper.
Cover the donuts and leave them to rise for another hour (at least).
Put oil in a deeper pan and let it heat up well.
Fry the donuts on both sides and remove them on a paper napkin to remove excess oil.
Powder with powdered sugar to taste.
