Quinoa seeds rinse well with cold water.

Quinoa is boiled in salted water. When it starts to boil, turn on low heat and leave for another 10-15 minutes.

Set aside and allow to cool.

Peel a squash, grate it and cut it into cubes. Cut the green onion into rounds. Finely chop the parsley. The carrot is grated.

Put the vegetables in a bowl and add the extra virgin olive oil, freshly squeezed lemon juice and chopped parsley.

Add a few tablespoons of quinoa and mix well.

It can be served immediately or left in the fridge for 15 minutes.
