Chickpea food, beans and smoked sausages

An appetizing Mexican cuisine with chickpeas, beans and sausages. Being a juicy food, it can also be called soup. The cooking time is relatively short, if you buy canned legumes, canned. If you prefer the option to boil them at home, then a pressure cooker will help you a lot.

  • 1 kg of boiled chickpeas (4 cans) - 400 g of dried chickpeas
  • 500 boiled white beans (2 cans) - 200 g dry white beans
  • 250 g boiled red beans (1 can)
  • 6 - 7 tablespoons olive oil
  • 2 onions, cleaned and finely chopped - 200 g
  • 5 - 6 cloves of garlic, clean and finely chop
  • 1 teaspoon dried thyme or a few sprigs
  • 1/4 teaspoon sweet and hot smoked paprika, to taste
  • 1 teaspoon paprika
  • 1 teaspoon of cumin
  • 2 bay leaves
  • 1 teaspoon capsicum paste (or 1 fresh pepper)
  • 1 x 400 g can of whole peeled or chopped tomatoes
  • 200 g of tomato juice
  • 1 tablespoon raw sugar
  • a few finely chopped parsley leaves
  • sea ​​salt and black pepper, freshly ground

If you use canned legumes, rinse them with cold water and set them aside.

Gently heat a pan with a thick base, then add 3 tablespoons of oil. Cook the onion for 2-3 minutes, over low to medium heat, then add the finely chopped garlic. Season with salt. Cook for another 3-4 minutes, then add the chopped tomatoes and about 200 ml of water.

Season with salt, pepper and raw sugar. Cover the pan and let the sauce boil for about 15 minutes on low heat.

Add all the beans, chickpeas and enough water to contain them (if you have boiled water from the beans, it's better). Season with 2 tablespoons of olive oil, cumin, bay leaf, paprika, thyme and pepper. If you like, add smoked paprika.

Cover the pan with the lid and let it boil for about 45 minutes on low heat. Cut the smoked sausages, thick slices and cook them in half the cooking time. Stir every 10 minutes. If the liquid has dropped, add more water.

When ready, season with salt, pepper, chopped parsley and 1 & # 8211 2 tablespoons olive oil. Serve with browned slices of bread. Have a soul in everything and increase your food! Let's cook!
